2 lbs pasta
½ cup butter
½ cup flour
1 ½ cups milk
2 ½ cups half & half
4 cups cheddar cheese, grated
2 cups gruyere cheese, grated
salt & pepper to taste
¼ teaspoon chipotle chili powder
Cook pasta in salted water until al dente.
Melt the butter in a large pot and stir in the flour to make a roux. Add the milk and half & half and cook until thickened. Add cheese and spices and stir until smooth. Lower heat if necessary. Once smooth, add cooked pasta and stir to coat.
If you're serving with pulled pork, or you don't like baked mac and cheese, stop here and eat! If you want to bake it, continue onwards:
In a frying pan, cook some bread crumbs and butter until toasted.
Place the mac and cheese into a baking dish and top with the bread crumbs. Bake at 400F for 15 minutes.
